Having a strange issue with a multi store set up. When we go to the back office store drop down menu and click "All Shops", the site re-directs back to the default store every time?. So we are unable to view "All Store" .... any ideas out there?

Prestashop generates many copies/thumbnails of all images that you upload to the site which are constrained to the predefined sizes that prestashop is set to.
You can change these dimensions to fit your needs by navigating to Preferences->Images. From here you can adapt the default resolutions of different images.
Once done you will need to scroll the bottom of this section to regenerate all of the images you have changed.

Of the top of my head I would recommend checking the products you are not seeing the labels on, and check whether or not these products are correctly associated with the intended categories.

What is the nature of your products? Having only 500-1000 different images suggests to me that you have many different product entries for different variations? Is this correct?
If so I would highly recommend the use of the product combinations functionality.

Correct, you will need to install and configure the mail alerts module. This can then notify yourself of new orders and low stock notifications. More than 1 email can be used, in a format of 1 email address per line.
