How to show "In stock" and not count down the stock but count the sales internally.

Hi, Is it possible to sell products and show them as "In stock" without any number? The counter shall not show how many are in stock. Just enough for any client.

However, the stock should internally be counted, preferably from 0 and up to know how many has been sold. I don´t want to have to restock.

The thing is, I will never run out of stock. The items are produced when they are sold. But this is not downloadable things. It is physical things which has to be counted and shipped.

Is this possible to accomplish with PrestaShop?
