Hi:

In my Backoffice I have two Admin user roles: Super-admin & validator. Validator user only use "order" & "customers" pages, so I need to hide to him all the order status except "Order accepted" or "Canceled Order". Other option, is to hide for him all the order status options and to show two buttons for accept or canceled. Also when he changes the status, he can't changes anymore. Only the superadmin.

You can't do this out of the box.

Try to look for the management type module or hire a developer for customization.
