how could I just order an option for a choice? Not a payment event. pick-up and pay only for our store! is this posible?

Just to be sure: you don't what to have many payments like paypal in your e-shop, just pay at your physical store?

If you have only one store, you can create carrier in backOffice and use COD module which should be free.

If you have more than one physical store, we were developing module for such case, but we didn't release it yet.

Thanks for the reply, You Understand I got a modified cod-module for my own and this works. but now I'm wondering how to get my Shopping Cart customer information turned off. like, company, vat-number, billing Address "selection" and billing address? I do not need these. Only name, e-mail, customer's address, telephone number. We always charge and pick up, physical shop. can you give me a tip?
(physical shop in Finnish it is "Kivijalkakauppa" = "StoneFootStore"

There are no settings to turn it off. 

You will need to modify your design template. If you don't have development skills, I would say leave like this, it's not that big of a problem.
