Search index issue

Apologies if this is in the wrong section but we're having an issue that I am yet to see a solution to on here...

 

We have a new site for our German language variant of our store (https://www.resincoat.de) however, we are having issues with our search index.

If we automatically build it via preferences -> search, only around half of our products show in the search. Despite this feature suggesting all products have been indexed.

When we manually build the search index in the database, it works fine and all products show correctly but as soon as a product is edited in the back office it becomes unsearchable, so this isn't really a sustainable fix.

We have disabled automatic indexing and tried various fixes such as messing around with weighting/adding missing products but no luck.

I suspect this is something to do with the language of the site, we're using language 2 which is German.

Has anyone experienced a similar issue before? Any ideas as to how we can fix this?
