Valid way for Overrides

Hi,

I read the forum, the doc and can't find a definitive way for Overrides in PS1.7. I understood that from now, the controllers and classes using Symfony and namespaces can't be override within the "override" folder. I can understand that, but in that case, how should we override anything that is not TPL/JS/CSS on PS1.7 ? My concern is that some controllers can be override because they use legacy code, but in a short future this will change and everything will break, so I would like to learn the "right" way.

So do you have any tutorial to point me at explaining the valid/best way to change core behavior ? Like adding variables in a FrontController file ?
