Where to add some parameters for custom Theme ?

Hi,

I'm creating a custom theme for a PS1.7. I need to have the possibility to set some parameters for this theme, but in the doc I see nothing about that and in the backoffice for the theme selection, the only fields that I see are to choose the logos. Is there a way to add more parameters to this page ? If not what is the best practice to create some parameters fields for the theme ? So we could have them in a smarty variable in all pages.

I ask this because this theme is only for one shop (a client of me), with a very specific design so the admin will never have to change any module position etc. Prestashop is very flexible, but in our case we need to block some things so the admins can't break module positions etc.
