Advise and Guidance on a re-install

I have been asked to move a shop from one server company (Go Daddy) to another. I am awaiting the new server details but in the mean-time taken a full copy of the file structure (including files) via FTP. This has come about after the URL friendly did not work and they see it as essential and want to remove Go Daddy as the potential issue.

(I have to say I have seen many posts with this issue and none seem to solve it - with very little positive response from Prestashop - which is really disappointing - too many people have the problem to be ignored IMO - I submitted a bug tracker a few days back and still no response)

However, I want to make sure I do this the correct way, and would welcome inputs on the correct procedure on backing up, and importing products, customers etc.

One concern I have is the people who installed the store as it is, overwrote the Prestashop theme with their own - does anyone know what this theme is? www.perfectpaysupply.com How would I ensure i get this to look the same without problems
