Custom Sorting in Product List.

Hello.
I've checked a few threads on this but havent found an answer.

My products are apples that ripen at different times:
January- February
March - April
May- June etc.

I'd like to have a sort option called "ripening time" that sorts the products list.
Is this possible to sort these?
