How can I change which elements are on my homepage? Like manufacturers, top sellers, etc...

Are these things modules? Are they un-installable/configurable from the admin panel? I want to be able to remove some that aren't really relevant to my business, and edit others that need editing, besides cracking open the html page, is there any way for me to do this?

Yes, all the blocks on your website are modules that can be configured or uninstalled. Just go to the Modules tab and scroll down to the "Blocks" section.
