Can't change the From email address and name

My shop is sending emails just fine though they always come "From" the default server email address rather than the shop name/email address that I've configured in the BO. So for instance, I get the order confirmation email or the test email but they come "From" [email protected] (obviously, I'm working with Bluehost here). Interesting to note that the "Reply To" address is the one that I've configured in contacts/BO. It's just the "From" name that is wrong. I've tried to hack all sorts of code and been all over the forums/Google but I haven't found anything. Any help would be greatly appreciated.

Well. no real progress on this so far. I should mention that this happens when I'm using the mail() function. I setup the smtp configuration and that seems to be working ok and sending from an email address at my domain. So it's working with smtp for now but I'd still like to know how to get the mail() function to work using domain emails.
