Start PS all over again

Hello everyone, I had some issues with prestashop 1.7, its been very messy to be honest, I took a work and the programer who was before me he kind of like messed up. Always its trouble to make some very simple changes to the web, and mostly when I do something, other thing just disappear and weird things like that.
So the site is on production so I just want to make another prestashop all over again by myself, when it is finished I want to rename it to the main domain... is that possible? would anyone give me some tip or place where I can search?
Basically I want the www.market.com still working
And make a prestashop from scratch, when its done make it visible in www.market.com
