Discount only certain sizes and quantities or remove size after sold.

Hi all. Sorry but I did a search and nothing came up.

Here is my dilemma. 

I am trying to get rid of a WHOLE BUNCH of cycling gear so I want to discount it on my shop. The catch is that I only want to offer discounts on the stuff I have in stock so the discount would be limited to certain sizes and limited quantities and once these sell, I would not want the discount to appear anymore. 

Basically, I want to liquidate the stuff I have but NOT offer discounts on models/sizes I don't have in stock because that would require me to order from our manufacturer and bring YET MORE items in.

So, the buyer visits this page for example...

... and if they select size S, the discounted price appears as it does when you set a specific price for that combination BUT when they buy it, the S size disappears and is no longer available to future shoppers. 

So, from what I know about PrestaShop, there is not way to do EXACTLY what i want. 

I looked at...

1- setting up a new catalogue price rule but this feature does not seem to allow for such detailed discounts.

2- going into each individual product and under pricing, setting a new price rule with the discount. It lets me discount certain combinations but NOT only 1, 2, 3, etc... pieces that I may have in stock so once the size S I have is sold for example, the price will remain discounted unless I manually change it FAST before someone else buys another at the discounted price.

Also, I have seen on other shop platforms where if say size S of an item is out of stock, it no longer appears as an option on the product page? Can PrestaShop do this? If so, where do I set that up. That would work although setting the specific price for all models and sizes I have to liquidate would be time consuming, if that's the best I can do I'll take it. 

Anyone have any ideas? 

I don't mind paying for an add on if it is a good one and does what I need.
