Please see attached image.... The values which should be available for importing products are

My prestashop only displays id, name, parent category, description, meta, utl rwetired, and image URL

Is it just my imported spreadsheet that isn't configured properly?

You need to select "Products" in the dropdown on the Tools > Import tab to import a product CSV. The import tool defaults to importing categories.
