Where does PS set the products var for email

Hi all,

I want to add some text to the email if the product isn't in stock or is frozen so can't be send.
To do that I'd like to know where PrestaShop is setting the product value.
In the email I only have {products}

It is the validateOrder function in classes/PaymentModule.php that creates the product table for the email. The table is written into the productsList variable, which is passed into the email as {products}.
