Contact Form Help

I have the up to date stable version of PS which works fantastic but I have a couple of problems with the contact form.

Firstly I need to use plain text so I can sync it with my blackberry device, this means when the emails come through they look like this:

Hi {firstname} {lastname},

You have received a message from a customer via your shop: CarBen Fibre Creations

Details of message:

E-mail address: [email protected]

Message:

Testing

-------------------------------

Is there any way of adding a name in place of the 2 entires at the top?

The other problem I have is the return address, the email address comes through in this format

testing.com [email protected]

As you can see its not a valid email adddress even though its typed in properly in the contact form, can this be fixed?
