How do I override shipping requirment

I am new to presta shop....but cannot use it becuse I need to override the check out step that requires some shipping to be selec ted

I woud rather have a shipping fee per item, but have ofudn a way to have 'combos' to be pick up or dleivery with the fee shown there.

So I need to bypass shipping choice section

Please help
