How do I configure the Quantities for My Simi-Custom Product?

Ok See I have alot of handmade products that have Options. but having issues

 

The customer has the option of what kind of fastner they want on it. 
Some of the products have 2 different fastners that can go on them. some have 3 options of fastners and some have 4 options of fastners they can choose from.

 

Now say I only have enough materials to make 12  This product has 3 options for a fastner.I dont' put the fastner on until they order the plroduct

and if I put the Quantiy of 4 for each attubute option but the customer is only wanting to purchase that item if there are 5 avalible. So since there is only 4 showing available the custoemr decides to look else where and i would loose the sale.

is there away for me to put the quantity to 12 total and the Attribute not to be part of the equation at all? Beides them telling me in a text box which they would like?
