Getting product information on backoffice's new Order

I'm using ean13 to store a multiplier and i need to add a dropdown menu based on stock and this multiplier when creating a new order on backoffice. I've been using $product->ean13 on the cart, frontpage and quantities but admin\themes\default\template\controllers\orders\form.tlp does not seem to have access to $product and i get a bit confused with all the Ajax in this file

 

 

how can i access the stock and ean13 of the product selected on the dropdown menu generated by searchProducts() (after searching and selecting a customer and searching and selecting a product, i need to add this field right next to the textfield to add the product to the cart)

 

 

Im not sure if im being clear or any aditional information is needed
