I should create a form that sounds at every time you save a product from backoffice, which hook should I use and how to achieve it?

There is a hook for this action named ActionProductSave, just add the function in your module like this:

public function hookActionProductSave($params)
{
  //your code here
}

And translate the module to this hook in: BO > Modules > Position
