Copying my website to a new domain

I am building another prestashop website, completely unrelated to my old one, but I want to use my old one as a template. I tried just copying the files to the new domain, and it works, but it also copied the database settings so both shops are linked to my old database. I realised I have to do a new installation to create the correct database settings, including the cookie key. My problem is this: my old website is prestashop version 1.1.0.5., and I no longer have the installation files for this version. Will it work if I install the latest 1.3 version, then overwrite it with the old 1.1.0.5. version, but updating the settings.inc php file?
