It will be on the same url ? (it will be better, in order to keep old SEO "juice")

You just have to upgrade your old prestashop (if it is created under prestashop...)

You just need to buy a medical theme and put all your products in the new website (can be done easily with storemanager)

Then you need SEO (check urls, redirection if needed, optimize titles, descriptions, check duplicate...)
