Where are prestashop smarty codes for pricing defined

Where (in what file) are the smart tags defined voor prices like : {total_price}, {total_tax_payed} etc ...

I want to add my own but I don't know where to start.

everything depends on context, where you exactly are 

category page?

product page?

some other pages?

 

each page has got controller, controllers are responsible for variables that are defined for .tpl files.

I need to output prices exl. taxes in the confirmation mails and I am looking for the solution for weeks now.
