Possible to have different handling charges for each item?

I'd like to add Handling charges for my items and noticed that there seem to be two ways of doing it:

 

1) First way is to go into Shipping > Shipping, then add an amount within the Handling charges text box.

 

2) The other way seems to be to edit a product, then select Shipping, then enter an amount within the Additional Shipping Cost (per quantity) text box.

 

The first way seems to be a global way of adding a handling charge.

 

But in my case, each item potentially could have a different handling charge amount. For example, item A might have a handling charge of $10, while item B might have a handling charge of $5.

 

Is there a way to have a different Handling charge for each item?
