Dh42
I have yet to test the new release out, but I would suggest never caching pages, you are just asking for problems. Use an opcode cache and you will get varnish like speeds because your php will be served from memory. I would just use varnish to cache static resources.
El Patron
I am looking into how we as shop owners can manage varnish from PrestaShop. The existing vcl management is to complex for 99% of shop owners but hosting is rolling it out as we now are seeing more and more 'I saved it, but when I return it's not there posts). Looks pretty straight forward and I was looking for something new to do other than buying more fishing gear.

Personally for my own purposes I would not use it but php cache which seems more transparent and no configuration headaches.
Dh42
I can't see how it would work to be honest. I wouldn't think companies like Gandi.net would be running varnish from the usual location and would maybe even be running a custom version. Generally I think low of hosting companies that run it, simple because it is a PITA most of the time.
