Is there Any way to create a CUSTOM ORDER page for Customers?

We have a decal sign shop and so we make everything 100% custom and to order.   

 

Customer gets to pick a SIZE, DESIGN, and COLOR   these are 3 custom variables.

 

I noticed that it seems that I have to add inventory of each item we have in order to get this to even populate a list, however when I do add 1 of each variation I end up with THOUSANDS of items in "stock" and this is simply not the case and very confusing.

 

If there any way to implement a way to CUSTOM ORDER items from a Prestashop page?

 

Example:

 

Item Design = Dog

Item Size =  [ Drop down menu ] 

Item Color = [ Drop down menu or clickable color boxes ]

 

without having to add thousands of variations and stock.  I would hate to add 1 item of 1 color and size and then have it look like it is sold out when in fact it is not.
