Change default sort order for products

I removed the sort-by selector for products (using this method), but want the products to be sorted alphabetically.  How would I do this?

 

I thought I might put back some of the sort functionality in the product-sort.tpl file, but can't figure out how I would get it to invoke the sort command without the form being explicitly invoked.  Any other way?

you cab define default sorting method in back office under preferences > products tab

That did not work completely, so I was thinking it may had something to do with my removal of the sort-by selector (though I can't see how).
