How to change "default attribute color" from black to white?

... but Prestashop defines "black" as standard color by default, even if no color is selected.

So ... where do I change this "default color / if no color selected" from black to white, without changing every non defined color?

No it doesn't.

Prestashop will by default use the first value within the attribute list. Or better said the first value that is available for the product.

To change it, you simply click on the "STAR" icon in any other row.

The row that does NOT show that "STAR" is the default selected one.

moreover, while you're defining the combinations you have to select one, if not - prestashop will do it automatically

 

... and this "automatically" color (black) must be defined somewhere ... but where?
