The number is used to select the category ( We last had a problem when a product/category starts with a number, like '2 colors' that it selected category 2 instead of that product/other category.) It also provides a simple solution of distinguishing products/categories that have the same name. To take the number away, may therefore take quite some effort, I suppose. I remember seeing something for removing leading numbers but I am not sure whether it was categories or products. Having the leading numbers has also its advantages as it leaves you free to change names without causing broken links. So beware before you change...
