[Solved]Removing Blocks?

Where do I go to remove or add blocks ie categories, viewed products, manufactures and how can I add my own header/nav bar to the top of my page.

This is what my site looks like now and I would like to keep the same header/nav layout for my store.

I just moved the files into another temp file to remove the blocks that I did not want to use. Not sure if that was the right way to do it but I got rid of them!
