so we're not actually selling products, but SERVICE.

 

here's the specific item on our website that i'm referring to:

so i'm trying to see if there's an option BEFORE A CUSTOMER CAN ADD IT TO CART, to select vehicle's YEAR, MAKE and MODEL using drop down menus.

 

for example: 2007 HONDA CIVIC > ADD TO CART

 

I would need the ability to customize available years, makes and models that we are able to service.

Yes, using attributes, you can look at a default Prestashop installation, in the Ipod category you'll see products using them.
