Can I create PrestaShop as a Skeleton, GitHub Repository?

Is it possible to set up PreastaShop in GitHub like a WordPress Skeleton?

We are trying to set up a GitHub so we can include our own modules and override folders outside of the original shop so we dont inadvertently change any files. We want to be able to always update prestashop without any hick-ups.

 

We know how to make prestashop into a Submodule on GitHub but we aren't sure if prestashop can be set up like the above skeleton.
