Sold out product in invoice

Hello, I'd like to ask for advice with problems.

 

I need some way to show in the invoice some products, which is in the order, but is not currently in stock - so it will not count that in the final price and it will have note - sold out instead of the product price.

 

It occurred to me that I can edit this product to the number 0, but and I'm not sure if the I will change rules for this (coz in default I can not put 0 to the count of the product) it will suffice to be deducted from the final price of the product price.

 

Anyone have any ideas please?
