Core news module block, how to remove [read more]?

I don't know about the specific module, but in general:

 

you can edit a lot of your store text by using the translation tool which is in the administration panel. Click on Tools, then translations. Click the spinner to see all the different component choices (front office, modules, back office and so on) and then click on the flag which represents your language. You'll see all the language that is editable.

 

If the field that you want to change is blank, then my suggestion is to just put a single space there, as leaving it blank will default to the default text.
