Changing category/product names & setting handling back to "0"?

I have two separate questions:

 

- I have changed the names of one category and one product, but they will NOT change in the webshop. Is there any way I can actually change them without having to remove them and add them again?

 

- When I was testing shipping and handling cost, I set handling to €1. Whenever I visit s&h editing screen again, it's set back to 0, but it isn't actually zero; when I add a product to my basket, the shop will still add the €1 handling + tax. Is there any way to set it back to zero? I tried creating a new carrier and removing the one I was using, but it's still set to €1 somewhere, and because it's invisible to me I can't change it.

I have a simular issue since I updated to 1.4.9. I cannot update any information on my categrory descriptions, not even directly from phpmyadmin. Also when I change the homepage trough the home page editor module, the results wont appear in the front office but I can see them in the backoffice.

I encountered the same problem a couple weeks ago when I was still using PS 1.4.7 But after just waiting for 3 days or so, the changes suddenly appeared in the front office. This is why I suspected my webhost to be incompatible (also having some DB errors and timeouts), but reading this post makes me wonder if the problem is something else.

I ended up making a new category instead and just moving all my subcategories there... fortunately it wasn't a lot of work in my case.
