Shipping problem, need advice

Hi,

I was wondering if anyone had a similar situation before:

This is the way our shipping is set up so far and it has worked perfect.

We got some kayaks this week and my boss asked me to put them up, but delivery must be arranged or pick up in store (deliver around Ireland and UK).

Perfect outcome would be to disable the delivery option at the checkout, but only for a number of products so it doesn't affect the rest of the items, can some one suggest a good reliable module or a way out?
