how to give access only to one category to employees

My question is quite straight forward i think, i want to know how can i give access only to one category to employees, let's say i employed someone but i want him to only access the X category and nothing else, add new products to it restock and even see the orders of the category

sounds like you would need to customize the admin tabs (category and product) as well as the admin order tab. you could set preferences for this employee role to only be able to access and edit those sections, but to get more granular to certain types of categories and orders, would require some customizations.

you could post your requirements in the paid modules/job offer forum. there are many developers in the community that would do this.
