Billing Customers (adjusting invoice before payment)

Hi Folks, we are looking to start a little local commuinty shop, with a deli, where people would be able to buy for example. cheese, which is not prepacked. but cut/sliced to order so its weight would vary from order to order. i have mananged in wording explained on site that prices and weights are approx,

 

so customer orders a cheese thats ways approx 400 gram on site, but when it gets cut in deli, it is only 385 grams it would be slight less in value, and also the same could happen the other way round,

 

four slices of ham could way differently... 397 grams or 408 grams etc

 

So is there away of entering/adjusting price up or down on invoice, before customer pays... for certain items... am not worried about entering weights on invoice just adjusting what the customers is/was expecting to pay... before they pay..
