Deleting old products and orders

I have a Prestashop running for some time now and I have no clue how to delete old products and orders from the database.

 

I wish I could select a date (e.g. everything out-of-stock and before 2011) and delete all these products.

Without messing up the order history or with a deletion of these orders too.

 

Does anyone know a solution?

I think all these old products make the queries slower... ?
