Payment Gateways and a slow hosting server

I was having terrible problems accessing my payment gateway (Paypal in this instance). Sometimes I had problems and sometimes I didn't, which made diagnosing the problem doubly difficult.

However, I believe I have now solved it, and so I made this post in case it is of value to others.

I had everything set up correctly, but the problem was that the server connection was (sometimes – depending upon the load) timing out when a) PS tried to access Paypal and when Paypal had done its stuff and tried to return to the shop.

I am hosting with Fatcow, but will be moving tout sweet to Nexcess.
