Using an override to remove something from the original class?

I have edited a couple of the controller classes so that I can remove the requirement for a phone number in customer registration.
Long term, rather than commenting out code in the Controller classes each time I install PS, I would prefer to use an override. I understand their use to add functionality, but can you use them to restrict?

Probably you can override function, where comment or change unnecessary piece of code.
Prestashop will use your class with your method, where functional will be disabled

Yep gonandriy's suggestion looks fine, that's what I do myself if there's no other way (like changing property values for a class before executing the function in question, then changing back). IIRC PS did store requirements in an array somewhere.
