Feeling Dumb, but have to ask: How to set Stock#, what IS EAN13?

I have read so many posts, I've read the great tutorials on the MODX Site, but for the life of me, I cannot find out exactly WHAT the EAN13 is, and I have no idea if the EAN13 is the stock number, or if it's not, where do I put my stock number( SKU I guess is the correct term?)
I have nearly 400 products to re-enter by hand( I just do not have the brain to tackle the whole CSV Import thing - mind you, I've read LOTS about it), so it'd be great to know where I put their SKU.
I love this shopping cart, I've tried/trialled well over 20 in the last month or 2! I apologise if this is a really dumb question, but I could not find the answer anywhere:-(

I use the supplier reference section to add product code/SKU so that customers cant just take the number and search the net for it, you could use the normal reference section, which I think shows on the product page on the frontend.

Thank you so much for that! I DID do a search for "EAN", and only found 2 vague references to it in the Wiki, and a lot of non-related posts about it. I hate it when you have to KNOW what search term to use to find what you're looking for:-(
