[Solved] Unable to update within backoffice options or add products

just recently - we are unable to update backoffice options or add new categories or new products.

Example: we click on "No" for Enable guest checkout, click on Save and it goes right back to "Yes" and does not save the "No".

We add new category, complete all items, and click on save - yet the new category does not show up.
