Modules - Payment: Currency, Group and Country restrictions are changing

This is happening so random that is impossible to troubleshoot by myself:

i set my settings in Modules - Payment: Currency, Group and Country restrictions for which payment methods will be available in checkout, everything works fine.

Now, after some days or a week, or even a month i get complaints from clients that they do not see some or all payment methods available and when i go to Modules - Payment settings i see different settings from those i set (!!).

For example payment method i had set to be enabled is not and some other which i don't want is enabled.

I am  the only one who has access and i haven't done any installations or uninstallation or anything else that could trigger this change.

 

Any idea what could be causing this prestashop decision making to change settings by itself?
