Advice on a complicated user/order import

HI,
I have this situation:

- site online: prestashop 1.7

- new version: prestashop 8.0.1

I brought the site online to a staging server and then upgraded, on staging server, to version 8. So far, so good.

Now, while the translators are working on the staging site to translate the product sheets into French, the online site obviously continues to register new users and new orders.

When the translators have finished their work, what should I do?
Is there a way to delete all customers and orders from the staging site and import them from the production site (so I can then replace the production site with the staging site, which then becomes the official site)?

I also have the problem that I use the "All-in-one" plugin with which customers win points, I should import these too.. 😪
