Edit the 'Order Status' list

When a customer places an order, I can go to that order and update the status of that order as per the screenshot below.

 

How can I edit that list? Which file do I need to change?

 

There are lots of options in the list my shop won't use, and there are items I would like to add. For example, I allow my customers to 'Pay on Collection', so I would like to add 'Collected' to the list.
