In the invoice, the prices are shown correct, but the phrase that the prices are without tax appears, knowing that the prices in the store and in the invoice appear with the tax
How can I change the phrase (Tax excl.) on the invoice to the phrase (Tax incl.)

I think what you need is there : 
Shop settings > Customers > Groups
There edit the group assigned to your customers and for the price display method, select tax included.
