How to disable stock managment and hide "OUT OF STOCK" for each product

How do I disable stock management and get rid of Out of Stock display above each product displayed on the site?  We accept orders only so there is no need to manage quantity of each product.

in 1.7.8.0 backend > configure > shop parameters > product settings > products stock > enable stock management > change to off.

Unfortunately, in my use case, I need to be able to turn stock management off for only a selection of items, so I will likely have to do the "just put in big numbers and dont forget to update it" method - which is a sloppy solution, in my opinion. Nothing against whom suggested that, but rather the development team should build out the stock management feature set so that a sloppy fix isnt the only recourse.
