I need to know how to call the $product field that is defined by "text when stock is low"

Hello,
I would like to know how i can possibly call this field when using smarty.

No matter how hard i try, I can't find an example in the existing code i have access to.

I only need to know how to call these two variables, I am even gonna use them in the product page, so there's no need to call the $product variable i think.

If possible, I can't find anywhere any documentation about how prestashop variables are organized. If anyone knows where to find that documentation, that would also work.
