filter out product by features

Hi

I am building an e-commerce with food product.

A few of my products contain allergen, like gluten (but there 18 kinds of different allergen), and I want to add a feature that allow my users to filter out product with gluten. (so they know it's safe for them to purchase a product).

I was thinking of using the free module named faceted search, but I seems to be only able to select product WITH gluten, while I want (obviously) to select all product (from a category) WITHOUT gluten.

Do you know any module that can achieve that ?

Or should I go into the faceted search module files to add the feature myself ?

How would you configure faceted search to "invert" the filter ? I didn't find the right option.
